Solstice Week Menu

Why do I always do this to myself? I know this week is going to be crazy, so what do I do? I buy a huge amount of fresh produce. Summer has gotten right up my nose and I am like a kid in a candy store at the farmers’ market. My rational planning just goes right out the window when presented with all those gorgeous vegetables.

Market haul today- pork roast, sundried tomato goat cheese, milk, lamb chorizo, 2 lamb hearts, 2 lb blueberries, cantaloupe, honeydew melon, casaba melon, frying peppers, long red peppers, eggplants, sweet peppers, green papaya, green onions, spaghetti squash, callaloo, potatoes

Sunday breakfast- breakfast skillets with lamb chorizo, potatoes, peppers, and cheese
Sunday- Green papaya pad thai, summer rolls
Monday- curry goat, mashed roots
Tuesday- sausage, peppers, spaghetti squash with tomatoes, lemon and basil
Wednesday- salmon patties, sauteed zucchini, herb rice
Thursday- spaghetti and meatballs
Breakfasts- honey-oat-pumpkin muffins, pumpkin erissery and idli
Lunches- pav bhaji, potato salad
