Eat Local Challenge- Week Two

Farmers’ market haul- milk, pork roast, eggs, blueberries, zucchini, yellow squash, eggplant, butternut squash, new potatoes, broccoli, golden cauliflower, spaghetti squash, cabbage, dragontongue beans, oranges. Everything here was about $70.

Last week I was worried we wouldn’t have enough food so I bought a little too much, so we had some produce languishing in the bins on Saturday. Everything was so colorful and varied at the farmers’ market that I bought a full week’s worth of produce… and then got home and realized that we were leaving Wednesday! So I triaged what would keep for the week we’re gone and made a plan to use up as much as possible between now and then. I have to admit that even though my kids eat probably double the amount of vegetables as the average American family, there is a point at which they’re going to balk. We reached that point over the weekend. I fully expect the boys to indulge in some junk food while we’re gone but we’re going to stock good food for them too.

Sunday breakfast- scrambled eggs with kale, spicy lamb sausage, roasted garlic, and cultured goat’s milk cheese from last week’s farmers’ market haul, fresh blueberries
Sunday supper- Pork roast, homemade plum sauce, roasted red potatoes with rosemary, sauteed squash and zucchini
Monday- “poor man’s chili”- ground beef and canned chili beans- comfort food!
Tuesday- band banquet potluck- broccoli & cauliflower baked in a decadent cheese sauce with brie, roasted garlic, and thyme
Wednesday- Roasted sausages & carrots, braised cabbage, mashed sweet potatoes
