What’s in the Basket- cabbage, tomatoes (greenhouse), mixed peppers (greenhouse), sorrel, white sweet potatoes, carrots, mustard greens, and 24 beautiful sour oranges.
I’m traveling for work this week, so the husband is cooking dinner Tuesday, Wednesday and Thursday. He owns his own business and his schedule tends to be hectic, so he planned simple meals that the kids can make if he can’t get home in time.
Sunday- I’m cooking Sunday dinner for a change! Pork roast in freshly made mojo criollo, simmered cabbage, carrots and peppers, guisados de gandules con coco, and maybe some yuca if I get around the digging it up out of the garden. And pumpkin pie for dessert.
Monday- Broiled trout, sorrel cream sauce, rice, roasted butternut squash
Tuesday- Hub’s deconstructed lasagna (farfalle tossed with spinach, homemade marinara, ricotta, parmesan, and fresh herbs)
Wednesday- pork chops, brussels sprouts, baked sweet potatoes
Thursday- roast chicken and carrots, rice
Friday- goat pool night! Leftovers or soup & sandwiches
