Pear Crumb Cake

This is my adaptation of a recipe from Tastespotting. It is really amazing, not too sweet. The original recipe was for a small 8″ cake, but I have three children and a small cake doesn’t last an evening. We’re having this for breakfast tomorrow!


1 c white flour

1/2 c whole wheat flour

1/2 c raw sugar

1/2 tsp salt

2 tsp baking powder

cinnamon, cloves, allspice, nutmeg

2 eggs

1/2 c milk

2 tbl oil

2 tsp vanilla extract

4 pears, cored and chopped


2 c flour

1/2 c whole wheat flour

1 c dark brown sugar or raw sugar +1tbl molasses

1 1/2 tsp ground ginger

2 sticks unsalted butter, melted

Heat oven to 350. Grease 9×13 pan with the butter paper.

Mix together all dry streusel ingredients, then stir in melted butter. Set aside.

Spread chopped pears evenly over the bottom of the pan. Mix together the dry cake ingredients in a small bowl, the wet ingredients in another. Mix together only until homogenous. The batter will be very thick. Spread over pears in pan and with a spatula pull batter through pears. Take streusel by the nadful and sprinkle thickly over cake, making sure all pears are covered. Bake for 20-25 minutes, until streusel is golden and fragrant.
